- Mix 3-4 tablespoons of Big Papou's Mediterranean Rub with 1- 1 1/2 sticks softened butter (not melted) and ½ cup of olive oil.
- Slice Italian bread vertically (almost to the bottom of the loaf but not quite all the way) from end to end and place on a piece of aluminum foil large enough to wrap the loaf in.
- Spread butter mixture between each slice of bread. This will insure that both sides of each piece have seasoning on it. Wrap the foil that the loaf is resting on around it and place in a 350-degree oven on a cookie sheet. (optional)
- Bake for approximately 15 minutes or until the butter has melted into the bread and top crust is crispy.
Once it is removed from the oven you can cut the pieces all the way through and serve as a delicious garlic bread appetizer.
The mixture can be made ahead and used the next day, if desired.
*NOTE: If pressed for time, you can always cut the loaf horizontally, spread butter mixture on and place each half on a cookie sheet and put under broiler for a few minutes. Watch closely. When cooked cut into slices, and serve.
Most importantly- ENJOY!
