Greek Salad with Big Papou's Mediterranean Rub June 30 2015

Fresh vegetables from the garden taste better in a salad when it's made with Big Papou's!

Simply make a salad with any of your favorites like lettuce, tomatoes, peppers, onions, cucumbers, etc.

Add olive oil and vinegar, then sprinkle crumbled feta cheese and Big Papou's Mediterranean Rub on top of salad.

Toss and enjoy!


Garlic Bread Balsamides November 06 2014

Recipes
  1. Mix 3-4 tablespoons of Big Papou's Mediterranean Rub with 1- 1 1/2 sticks softened butter (not melted) and ½ cup of olive oil.
  2. Slice Italian bread vertically (almost to the bottom of the loaf but not quite all the way) from end to end and place on a piece of aluminum foil large enough to wrap the loaf in.
  3. Spread butter mixture between each slice of bread. This will insure that both sides of each piece have seasoning on it. Wrap the foil that the loaf is resting on around it and place in a 350-degree oven on a cookie sheet. (optional)
  4. Bake for approximately 15 minutes or until the butter has melted into the bread and top crust is crispy.

Once it is removed from the oven you can cut the pieces all the way through and serve as a delicious garlic bread appetizer.
The mixture can be made ahead and used the next day, if desired.


*NOTE: If pressed for time, you can always cut the loaf horizontally, spread butter mixture on and place each half on a cookie sheet and put under broiler for a few minutes. Watch closely. When cooked cut into slices, and serve.

  1. Use it on steak. Rub a light layer of EVOO on each steak. Rub Big Papou's® Mediterranean Rub on meat with a utensil or by hand, and marinate. Grill or broil to preference.

  2. Use it on chicken, whole or parts. Rub a light layer of EVOO on bird. Bathe bird liberally with lemon juice. Rub Big Papou's® Mediterranean Rub on meat with a utensil or by hand and marinate. If you are cooking a whole bird place some inside the cavity. Cook or grill to preference.

  3. Use it on pork chops. Rub a light layer of EVOO on meat. Rub Big Papou's® Mediterranean Rub on meat with a utensil or by hand and marinate. Grill to preference.

  4. Use it on lamb chops or leg of lamb. Rub a light layer of EVOO on meat. Bathe lamb liberally with lemon juice. Rub Big Papou's® Mediterranean Rub on meat with a utensil or by hand and marinate. Grill to preference.

  5. Use it on rabbit parts. Rub a light layer of EVOO on meat. Bathe rabbit liberally with lemon juice and white wine. Rub Big Papou's® Mediterranean Rub with a utensil or by hand and marinate. Cook to preference.

  6. Use it on fish. Place a whole, cleaned fish such as striped bass or bronzini on a skillet. Bathe liberally with lemon juice and white wine. Rub Big Papou's® Mediterranean Rub on outside and inside of fish and marinate. Broil or grill to preference.

  7. Use it on game such as venison cutlets or back straps. Rub a light layer of EVOO on meat. Rub Big Papou's® Mediterranean Rub on meat with a utensil or by hand and marinate. Sautee on a very hot skillet and flip meat once. Do not overcook.
